It’s Mango Tango time, my friends!
So. Let me tell you a story. At the beginning of last week I got really excited about how many salads I was going to eat during the coming week, and how brilliant I was going to be at living mainly off greens. But it turns out, I grossly overestimated the number of times I’d be willing to sauté kale and serve it up as a side to my fish or chicken. By Thursday, inevitably, I was a sad case: I had no less than 8 cups of baby spinach and kale left, and I was throwing internal mini-tantrums every time I opened my fridge and saw the greens, refusing to eat them but chastising myself for it at the same time.
I hate throwing away food.
But I couldn’t imagine any other way to eat spinach or kale that didn’t actually taste like spinach or kale. So I took a break from berating myself to waste some time on the interwebs. And I saw this dog on youtube doing the merengue.
Stay with me on this. I promise it goes somewhere.
I was watching this video and laughing so hard, and I couldn’t believe the awesome trick this dog was pulling off. Sarah’s pups Pepper and Mojo can hold food on their head, but this dancing dog is like the equivalent of having them actually cook for us. And then one day later — when my spinach was only a few short hours from turning and I was secretly still distressed about it — I was telling my friend all about this dog that could dance. I couldn’t remember the name of it, and I called it a “tango.”
And that’s when it hit me.
I had a mango in the fridge. And I realized just in the nick of time that I could blend up all my spinach and kale with a little water, add some mango and banana, and have a beautifully simple, healthy creation that didn’t actually taste like spinach or kale. And that’s how this recipe came to life.
The moral of this story? You never know where you’ll find inspiration.
And no greens were thrown away in the making of this post. I used them all up!
So of course, at the beginning of this week, I doubled my grocery purchase of kale and spinach. Because I’ll be having this every morning until I can’t stand the taste of sweet, sweet mango. Which will probably be right around the same time I get sick of watching this dog tango.
I mean, merengue.
- 1 ripe banana
- 1 cup of frozen or ripe mango
- 1¼ cup of baby spinach
- 1¼ cup of baby kale
- 1 cup of water
- optional: 5-6 ice cubes & *protein powder
- Using a Vitamix, Blendtech or other high voltage blender* add kale, spinach, & water to blend the mixture well.
- Make sure all the bits and pieces get blended together so the mix is very smooth.
- Add mango and banana + ice cubes if using and blend with the spinach mix until the mixture is smooth and not chunky.
- Pour into 2 glasses and enjoy!
If enjoying this for breakfast we recommend you add a scoop of low sugar/low carb protein powder to the smoothie to get a nice dose of protein with it.
