I have this thing you guys…it’s kinda weird. And a bit of an obsession.
I LOVE miniature food.
Honestly, I love miniature everything. I’ve even been secretly saving up spare change to create my own fairy garden with a miniature house that has a miniature door and a miniature spiral staircase and a miniature fence…not so secret any more, I guess. Don’t tell. But this is a food blog, and maybe knowing how crazy I am deep down inside is really TMI, so I’ll try to keep this food-focused.
Some of my favorite miniature foods are: mini-sliders (pork, beef, chicken…I don’t discriminate!), piggies-in-a blanket (cocktail weiners wrapped in crescent dough), mini-creme brulees, mini doughnuts, mini twice baked potatoes (made from fingerling potatoes!), mini-pies…
Before you start thinking, “Whew, Lisa’s got issues. That girl is quite odd,” I would like to point out that I’m not alone in my miniature-food fetish. Many people live happily with this same obsession. There’s even a cookbook called “Tiny Food Party” and it is A-D-O-R-A-B-L-E. Just like that. It’s worth a buy just for the fun pics, but the recipes are awesome too.
The only problem with miniature food, as you might have noticed in my list of favorite mini-foods, is that it’s often snacky or dessert-based. Which means that my free day suddenly feels like only a miniature window of opportunity to eat ALL THE MINI FOOD. That’s not fair, is it? So I came up with the zuke bite. It’s mini food you can eat all the time.

Ah, now the title of this recipe makes sense, doesn’t it? 😉
We made ours with pepperoni and olives, but you could do any toppings you’d like, just make sure they’re chopped up really small so they fit on the zucchini slice and each bite gets a bit of everything. The pepperoni is a perfect size to pop on each one, which makes it even faster to throw these together.
These miniature pizzas are a one-bite reminder of the real deal and just as yummy. I mean, like, pop-’em-til-they’re-gone yummy. Like last weekend, when you ate that entire medium Pizza Luce by yourself, but without the remorse or guilt.
Oh wait, that was me.
But it could’ve been you too. Lots of people binge on ‘za, and we don’t want to stop you. So go make this miniature food, and then you can do one of our miniature workouts (they only take 10 minutes), and soon enough you’ll be able to fit into those miniature-sized jeans.

- 2 zucchinis, sliced ½ inch
